Por um lado &#8211; chamemos-lhe a multid\u00e3o da corrente dominante &#8211; o objetivo \u00e9 fornecer-lhe um vinho fi\u00e1vel e saboroso. Qualquer que seja a tecnologia ou a arte de vinifica\u00e7\u00e3o necess\u00e1ria para o fazer, como a utiliza\u00e7\u00e3o de enzimas, concentradores de v\u00e1cuo, osmose inversa, taninos adicionados e concentrado de vinho, entre muitas outras t\u00e9cnicas e ingredientes, \u00e9 uma quest\u00e3o de necessidade. Para a m\u00e1fia mainstream, os fins justificam os meios.<\/p>\n<p>Do outro lado &#8211; chamemos-lhes a Posse Natural &#8211; a ideologia \u00e9 tudo. Para eles, os meios <em>s\u00e3o<\/em> o fim. O vinho resultante \u00e9, por assim dizer, um mero subproduto.<\/p>\n<p>A Natural Posse persegue uma vis\u00e3o de pureza vin\u00edcola que condena o uso de leveduras cultivadas (em oposi\u00e7\u00e3o \u00e0s selvagens), tudo exceto a mais m\u00ednima adi\u00e7\u00e3o de di\u00f3xido de enxofre, uma rejei\u00e7\u00e3o absoluta de aparelhos de alta tecnologia como osmose inversa e concentradores de v\u00e1cuo, nenhuma filtra\u00e7\u00e3o e, acima de tudo, uma ades\u00e3o aos preceitos org\u00e2nicos ou, melhor ainda, biodin\u00e2micos no cultivo da vinha.<\/p>\n<p>Agora, tudo isto pode parecer um pouco demais. E, at\u00e9 certo ponto, isso \u00e9 verdade. No entanto, o que \u00e9 preocupante \u00e9 o n\u00edvel crescente de den\u00fancia e menosprezo que acompanha os \u00faltimos comunicados de cada uma das partes.<\/p>\n<p>Vale a pena notar &#8211; e isto \u00e9 importante &#8211; que grande parte do fogo de artif\u00edcio n\u00e3o vem dos pr\u00f3prios produtores de vinho, mas dos seus partid\u00e1rios: bloguistas, importadores, distribuidores, retalhistas e escritores de vinhos.<\/p>\n<p>E o que \u00e9 que n\u00f3s, espectadores, devemos pensar? Eu digo-vos. Dito de uma forma simples, dever\u00edamos pensar que todas as cruzadas s\u00e3o uma loucura. S\u00e3o in\u00fateis. E destrutivo. Acima de tudo, s\u00e3o maus substitutos para o pensamento refletido.<\/p>\n<p>A Natural Posse est\u00e1 fora de si? De facto, n\u00e3o. Eles t\u00eam raz\u00e3o e \u00e9 uma boa raz\u00e3o. O Mainstream Mob tem sido discreto &#8211; \u00e9 tentado a dizer &#8220;furtivo&#8221; &#8211; ao n\u00e3o chamar a aten\u00e7\u00e3o para as muitas formas que alguns deles escolhem para lidar com os seus vinhos.<\/p>\n<p>Eles sabem que grande parte da tecnologia moderna \u00e9 decididamente pouco rom\u00e2ntica. Quando o vinho fino se afasta tanto da mensagem das uvas e do local (o que pode acontecer e acontece com a utiliza\u00e7\u00e3o de concentradores de v\u00e1cuo e osmose inversa), perdemos algo vital, nomeadamente, um tipo essencial de verdade.<\/p>\n<p>Quando bem feitos &#8211; o que certamente n\u00e3o \u00e9 sempre o caso &#8211; os vinhos &#8220;naturais&#8221; criados com a inten\u00e7\u00e3o de uma pureza de express\u00e3o podem ser mais tenros, mais subtis, mais matizados, mais dimensionais e estratificados. Estas virtudes, se forem alcan\u00e7adas sem falhas de vinifica\u00e7\u00e3o, tornam incontestavelmente um vinho &#8220;melhor&#8221;.<\/p>\n<p>Mas o que n\u00e3o precisamos \u00e9 da sanha que mancha a Natural Posse.
